Cocktail Magic by Warren

Warren doesn't just make drinks — he makes moments. Every cocktail on our menu is his creation, built around our estate apple brandy and cherry liqueur, distilled right here at Prospect Hill Orchards.

Whether it's a smoked Old Fashioned, something bright and seasonal, or a riff on a classic you didn't know you needed — Warren's got it handled. Come in, sit down, and let him surprise you.

A Legacy in Every Bottle

What truly distinguishes HVO is the Clarke family heritage that imbues every bottle.

Rooted in the fertile soil of the Hudson Valley, our orchards have been family-owned and operated since 1817.

Each apple used in our brandy is carefully cultivated and harvested from trees we've nurtured for generations.

This hands-on, farm-to-bottle approach ensures that you're not just enjoying a fine spirit; you're savoring a piece of our family's legacy, refined into a spirit that marries tradition with modern enjoyment.

Not your Grandfather's
Apple Brandy.

HVO or Hudson Valley Eau is a spirit that harkens back to the first popular liquor here in the North East United States.

The French call it eau de vie - Water of Life.
It is the first run of hard apple cider through our still.
Clean with a hint of fruit.

We are having fun making cocktails both modern and historical as well. Come join us.

Cool days + warm nights

Aged Apple Brandy

Our HVO aged in small batches. Currently on batch 3 - aged for 3 years in 12 gallon, reconditioned used barrels. 86 Proof tastes about right for this one.
